After a long day of work the last thing I want to do is spend hours in the kitchen. Anyone else? Something that has helped my household run smoothly and efficiently is meal planning. At the beginning of the week I decide what I want to cook each night and then go to the store to get all the ingredients. Having every ingredient on hand allows me to feel less stressed at the end of the day and excited to cook. This week I decided to try a new recipe and it did not disappoint!
INSTRUCTIONS:
- Start by placing your salmon in a bowl and add ¼ cup honey, 1 tablespoon sriracha, 1 teaspoon garlic powder and a pinch of salt. Combine all the ingredients and bake at 400 degrees for 12-15 minutes.
- While the salmon is cooking, get to work on your salsa. Cut 1 cup of pineapple, ½ cup of red onion, 1 avocado and mix. To complete the salsa add cilantro and chili powder to taste.
- Once salmon is ready, add salsa to the top and serve over a bed of your favorite salad or grain. This meal is so refreshing and a crowd pleaser.
